This program is designed to help cooks, who work 40 hour weeks and previous culinary students use their existing knowledge and experience, while learning the fundamentals of running and leading a professional kitchen.

Culinary Essentials

As the preliminary course, this class covers basic techniques like terminology, seasoning, cooking methods, knife skills, mise en place, and food safety and sanitation.

Baking Essentials

Build your baking skills upon the foundations taught in Basic Culinary. Cover pastries from bake shop staples to international desserts, along with the theory and chemistry of pastry arts. Includes cookies, custards and breads.

Beverage Management

In this course, we will explore the history of alcoholic and nonalcoholic beverages, responsible alcohol service and regulations that impact the beverage industry. Various types of beverages that make up a successful beverage program including beer, wine, spirits, coffee and tea. 

Nutrition and Wellness

More and more people are trying to lead healthier lifestyles and nutrition is a vital part of this. After taking this course, you will have an improved understanding of the basics of nutrition. Ultimately, this knowledge will help you provide healthy options.

Basic Sanitation and Food Safety

 You will study the causes of food-borne diseases and kitchen injuries, and you will learn ways of preventing them. Prevention, of course, is the most important thing to learn. 

Hospitality Management

You’ll learn the financial and operations management skills required to operate hotels, restaurants, tourist destinations, travel agency and event planning in the U.S. and around the world. 

World Cuisine

Explore global cuisines, learning the cultural history, key ingredients, cooking styles, characteristics, and recipes of everything from Asian and African to European and Latin American cuisine.

Menus, Recipes and Cost Management

Learn how the menu is used as a financial and communication tool.  How do we measure ingredients and portions, convert recipes to different yields, and calculate food cost with the aid of written recipes.

Business Management

This course covers such topics as business planning, pricing, credit management, government regulation, legal concerns, and business ethics. Students learn how to manage and how to lead. For the final project you will create a business plan for a food service operation.

Food Media

Learn how to style and photograph food from veteran food photographers. Perfect your food writing skills for magazines and newspapers or learn the ins and outs of cookbook writing and food marketing. Master the art social media posting and more. 

Program Structure

The course is structured to make your learning experience easy and fun. Lessons are divided into 3 simple stages.

  • Step 1: Research it– Each week will begin with your assigned reading that you will read pertaining to the featured theme. 
  • Step 2: See it– You will have access to the step-by-step videos that are shown in your online class. 
  • Step 3: Cook it– You can now execute the technique by taking photos and videos where instructed to.

This simple but efficient method will give you the confidence to complete each course at your own pace.

If you want to earn your Certificate of Completion, you have 6 months to satisfactorily fulfill the course requirements.If you need more time to complete the course requirements, we provide a 30-day extension at no charge. After, you may purchase additional 30-day extensions for $99.99 each, as many as you wish and at any time. If you are not interested in earning a certificate, you still have lifetime access to your course content.

Your course is delivered 100% online and available on-demand 24/7 from any internet enabled device. The program is self-paced, meaning there are no specific dates to begin, to submit assignments or attend class at any particular time. If you are interested in earning your Certificate of Completion, you have six months to satisfactorily fulfill the course requirements. Course extensions beyond six months are available for an additional fee.

Upon the successful completion of this course you will be issued a Certificate of Completion. This program is being used as a training tool in professional kitchens, chefs and cooks looking to enhance their skills and knowledge. 

The course equipment list will be email to you, outlines which items are needed throughout the course. While not all will be used right away it’s important to have them available when the lesson requires.

To enrich your learning, we encourage you to ask course content questions or share comments at anytime. As an important part of your curriculum, you will complete over 30 instructor-graded cooking assignments in which you photograph your dishes and describe your process. With each of these activities, a member of our instructional team will review your work, respond with feedback and provide a grade. You will also be invited to a number of live events on various topics related to your course. If you cannot attend, they will be recorded for later viewing.

There are two types of assessments: quizzes and instructor-graded activities (Written/Lab assignments). All quizzes are formatted as true/false or multiple choice. You will also complete over 30 instructor-graded cooking assignments in which you photograph your dishes, describe your process and upload into the course. With each of these activities, a member of our instructional team will review your work, respond with feedback and provide a grade.

The course material covers includes approximately 220 hours of learning, which includes various learning activities, practical cooking exercises, written assignments and graded exams. You can do this at your own pace, but it takes regular work and discipline to complete the course. To earn your Certificate of Competion within six months, we estimate you 12-15 hours per week learning to complete the course requirements. Best of all, most of this time is spent cooking.
